Cheat's Guide to Baking Focaccia

Focaccia is the easiest thing to make. Use this recipe when friends pop over for a drink and you want to pretend you've done something fancy,  or when you want to bulk out a lunch for carb-sucking creatures like my kids. It's my all-time go-to!

500 ml water

4 tb olive oil (I often use the leftover stuff out of the feta jar!) 

2 tsp salt

4 tsp sugar (I leave this out, but purist bakers wouldn't)

6 cups flour 

4 tsp yeast

Now, I whack in the bread machine for the mixing, but you can just mix the ingredients together, knead the dough for 10 mins on a light-floured bench (use your muscles!) and pop it in a bowl for 10 mins cover with clingfilm and wait for it to rise. 

When the dough is ready, line a large flat tray with baking paper and spread the dough flat with your fingers to make the focaccia shape. 

The get creative with your toppings: olive oil and a pinch of salt is a must. I also sprinkle rosemary from the garden, those leftover bits of feta that sink to the bottom of the jar, olives, sundried tomatoes, slices of fresh tomatoes etc etc etc ... use your imagination. 

Put into a pre-heated oven at 200 degrees for 25-30 minutes. 

Makes 2 large serves.
